Cheeses - No Dairy, No Guilt!

Learn to Make Delicious Nutritious Raw Cheeses That Satisfy Your Cravings and
Nourish Your Body

Taught by Dr. Ritamarie Loscalzo and Chefs Karen Osborne and Pamela Weems

Cheese seems to be an almost universal comfort food! Cheese and crackers, wine and cheese, or simply cheese by itself has an appeal unlike no other food.

With all the evidence and research suggesting that dairy products can cause serious health conditions, ranging from allergies to cancer, you may feel heart-broken that one of your favorite foods is just not conducive to good health. Giving up cheese is one of the most challenging things my patients and students are asked to do in the interest of creating vibrant health.

Eliminating Dairy Can Reduce Allergies and Decrease Your Risk of Autoimmune Disease, Cancer, Heart Disease and Diabetes

It's pretty clear to us from a clinical and research perspective that eliminating dairy from your diet is an effective way to increase your energy and boost your zest for life!  It will also decrease your health care costs in the long run.

Making the shift away from milk may not feel that difficult as letting go of cheese because of the widespread availability of milk substitutes at the grocery store, including almond milk, soy milk, rice milk, hemp milk, hazelnut milk and coconut milk.  There are sweetened and unsweetened options and some milks come in a variety of flavors.  If you prefer to avoid the processed milk substitutes at the store, you can easily make your own.

Great Tasting Cheese Substitutes Are Hard To Find

Most of the cheese substitutes sold at the store are highly processed and are not even really dairy-free because they contain casein, a protein extracted from cow's milk that's used to make them creamy. Casein is the protein that causes dairy allergy symptoms.

Locating a healthy and nourishing cheese substitute was a nightmare, until now!  You can make your own cheese substitute right in your home kitchen!  Your dairy-free cheese substitute comes complete with probiotics to feed your immune and digestive systems.

With us to guide you, making non-dairy raw cheese in any shape or form is easy.

Now you can enjoy blocks of cheese, spreadable cheese, slices of cheese, ricotta and cottage cheese look-alikes and even fancy party cheese balls and layered cheeses. You can spread it on crackers, smoother your vegetables, top your pizza, fill ravioli, layer in lasagna or just slice it and eat it plain. Learn to make savory, sharp, or tangy cheese! You can enjoy the cheesy taste that we all know and love while strengthening your immune system and improving your digestion at the same time!

Our cheeses are comprised of raw nuts and seeds, probiotics, some lemon juice, seasonings, nutritious binders like Irish moss and psyllium husk and a variety of herbs.  They are delicious and nutritious additions to any diet.

We'll be teaching our secret cheese making techniques on January 16.  The live class is in Austin, Texas and it will also be broadcast over the internet and available on digital video afterward.

Here are just a sampling of the recipes you'll learn to make:

It's such a great feeling to enjoy the tangy creaminess of cheese, knowing it's so nutritious.  What a delicious way to replenish your gut with probiotics!
